MUGA MOLE RANDAYI/MUGA GHASHI/KONKANI MUGA RANDAYI
Muga randayi is a must on festivals like Ganesh chaturthi, Deepavali, Dasara etc., Muga mole Randayi or Muga Ghashi, is a popular vegetarian Konkani dish made with sprouted moong beans. It can be made with the skin or without the skin. Normally made without the skin.

Servings: 3 to 4 people
Ingredients:
1 cup sprouted moong beans (mooga)
1 potato cut into cubes or raw banana cut into cubes (optional)
1 cup grated coconut
4-5 dried red chilies(bedgi mirsang)
2 teaspoon coriander seeds
1/2 teaspoon turmeric powder
A small piece of tamarind
2 tablespoons oil
Salt to taste
Water as needed
For Tempering:
2 tablespoons oil
1 teaspoon mustard seeds
1-2 dried red chilies(bedgi)
A few curry leaves
A pinch Asafoetida(hing)
Instructions:
1. Heat 1 tsp of oil in a pan and. Then, add dried red chilies, coriander seeds. Fry for a few seconds until fragrant. Add grated coconut, turmeric powder and tamarind once cools down. Grind into a paste (maasol) adding the required quantity of water.
2.Add the sprouted moong beans (muga) to the pan. Add chopped potato. Pour enough water to cover the moong beans and bring the mixture to a boil. Reduce the heat, cover the pan, and let it simmer until the moong beans are cooked and tender. This usually takes about 15-20 minutes.
3. Once the moong beans are cooked, add the coconut paste(maasol) to the pan and mixwell. Adjust the consistency by adding water if required. Add salt to taste. Let it simmer for a few more minutes to allow the flavors to blend together.
4. In a separate small pan, heat 2 tablespoons of coconut oil for tempering (coconut oil smells better). Add mustard seeds and let them splutter. Then, add dried red chilies and curry leaves. Fry for a few seconds until aromatic.
5.Pour the tempering over the Muga Randayi or Muga Ghashi and give it a gentle stir.
Serve the delicious Muga Randayi or Muga Ghashi with steamed rice or hot rotis. It pairs well with a side of pickle or papad.

Note: You can adjust the spice level according to your taste preferences by adding more or fewer red chilies. Additionally, you can garnish the dish with freshly chopped coriander leaves for added freshness.
