Shevya Payas, also known as Shevayachi Kheer, is a delicious and traditional Konkani dessert made with vermicelli noodles (shevai) cooked in sweetened milk and flavored with cardamom and nuts. It's a popular sweet dish prepared during festivals and special occasions. Here's the recipe for Konkani Shevya Payas:

Ingredients:

  • 1 cup vermicelli noodles (shevai)

  • 2 cups boiled and cooled milk

  • 1/2 cup sugar (adjust according to sweetness preference)

  • 1/4 teaspoon cardamom powder

  • 1 tablespoon ghee (clarified butter)

  • A pinch of saffron strands (optional, for garnish)

  • Assorted nuts (almonds, cashews, raisins), chopped and toasted

  • 2 cups Water (boiled)

Instructions:

  • 1. Heat a tablespoon of ghee in a heavy-bottomed pan or kadai over medium heat. Add the vermicelli noodles and roast them until they turn golden brown and aromatic. Stir continuously to ensure even roasting.You can use the roasted shevai also. No need to roast too much.  

  • 2. Pour boiled hot water to the roasted shevai. Allow it to cook on a low flame. Keep it for 5-6 mins. Switch off the flame.

  •  3. After cooling, add boiled and cooled milk and mix it properly. Then add the sugar, mix it well. 

  • 4. Add cardamom powder to the payasam and mix well to infuse the flavor.

  • 5. In a separate pan, toast the chopped nuts and raisins in a little ghee until they turn golden brown and aromatic.

  • 7. Garnish the Shevya Payas with the toasted nuts and saffron strands (if using).

  • Serve the delicious Konkani Shevya Payas warm or chilled as a delightful dessert to end your meal.

Note: You can adjust the sweetness of the payas according to your preference by increasing or decreasing the amount of sugar used. You can also add a pinch of saffron strands soaked in warm milk for added flavor and aroma.
