Phagla Phodi is a traditional Konkani dish made with sliced Phagla or Kantola or Spiny gourd or spine gourd coated in a spiced gram flour and rava shallow fried to crispy perfection. It is a popular and delicious Konkani snack. It can be served as a side dish with rice and Dali toy. It is available in the rainy season. It is very good for health and contains lots of Vitamins and minerals. It helps treat different health and skin disorders. It regulates blood sugar levels.

Ingredients:

  • 4-5 raw green phagla(Spiny gourd)

  • 1/4 cup gram flour (besan) or rice flour

  • ½ cup  rava

  • 1/2 teaspoon red chili powder (adjust according to spice preference)

  • A pinch asafoetida (hing)

  • Salt to taste

  • Oil for shallow frying

Instructions:

  • 1. Wash the Phagla thoroughly with water and  cut them into thin slices. You can either use a knife or a mandoline slicer for thin and even slices. Keep the slices in water to prevent browning.

  • 2. In a mixing bowl, add salt and red chili powder on the phagla. Mix thoroughly. Combine the  gram flour, rava on a plate. Mix well to form a dry spice mix.

  • 3. Coat the spice mix over the salted phagla properly on both the sides.

  • 4. Heat a tava over medium heat for shallow frying.

  • 5. Spread oil on a hot tava.Carefully drop the coated phagla slices on the hot tava. Fry in batches, making sure not to overcrowd the pan. Put some oil over the phodis. Cover with a plate. 

  • 6. Fry the Phagla Phodi until they turn golden brown and crispy. Flip them occasionally for even frying.

  • 7. Remove the fried Phagla Phodi with a  flat spoon or kailata.

  • 8. Repeat the process with the remaining phagla slices and spice mix until all the Phagla Phodis are fried.

  • 9. Serve the crispy and flavorful Phagla Phodi hot as a snack or side dish with rice and dali toy. It can be enjoyed on its own or with chutney or ketchup.
