It is a popular simple and easy deep fried snack prepared with Besan flour. There are many types of Shev. Here is a simple way of making sev in Konkani homes. There are many types of Shev. Teekh shev, Salted shev, green shev, tomato shev, Garlic shev etc.,

Servings: 4 to 5 round sev bhatti

Ingredients:

  • 2 cups besan (gram flour)

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • Salt to taste

  • 1 to 2 tablespoon hot oil

  • A pinch Asafoetida (hing) powder

  • ½ cup water 

  • Oil for deep frying

Instructions:

  • 1. In a mixing bowl, combine the besan (gram flour), turmeric powder, cumin powder, hing and salt. Mix well to combine all the dry ingredients. Add hot oil from the pan in which it is to be deep fried. 

  • 2. Gradually add water to the dry mixture while stirring continuously. The water should be added little by little to form a smooth and thick batter. Make sure the batter is not too runny or too thick. It should have a slightly pouring consistency.

  • 3. Heat oil in a deep frying pan or kadai over medium heat. To check if the oil is hot enough, drop a small portion of the batter into the oil. If it sizzles and rises to the surface immediately, the oil is ready.

  • 4.Fill a sev press or chakli maker with the prepared batter. Choose a disc with small or medium-sized holes, depending on your preference for the thickness of the sev.

  • 5. Hold the sev press over the hot oil and press the handle to squeeze out the batter in a circular motion. Move the press in a continuous circular motion, making sure the sev doesn't overlap too much.

  • 6. Fry the sev until it turns golden brown and crispy. Use a slotted spoon (Jharo) to remove the fried sev from the oil and transfer it to a paper towel-lined plate to absorb any excess oil.

  • 7. Repeat the process with the remaining batter, frying the sev in batches. Allow the sev to cool completely before storing it in an airtight container.

Your homemade Shev/Sev/Kare  is ready to be enjoyed! Sev can be eaten as is or used as a topping for chaat, salads, or other snacks. It's a versatile and delicious snack that adds a crunchy texture and a burst of flavor to any dish.
