Konkani Mixed Vegetable Sukki Bhaji, a flavorful and dry vegetable stir-fry made with an assortment of vegetables. It is simple and easy to make with all vegetables which are there with you.

Ingredients:

  • 2 cups mixed vegetables (carrots, beans, peas, potatoes, cauliflower etc.), chopped into small pieces

  • 2 Onions chopped

  • 5-6 garlic cloves chopped 

  • 1 tomato chopped 

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust according to spice preference)

  • 1 tablespoon oil

  • 1 teaspoon Dhania powder

  • ½ teaspoon jeera powder

  • 1/2 teaspoon kitchen king masala 

  • Salt to taste

  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  • 1. In a pan or kadai, heat oil over medium heat. Add cumin seeds. Allow them to splutter.

  • Add chopped onions, chopped garlic and saute them well. 

  • 2. Add the chopped tomatoes. Saute them again. 

  • 3. Sprinkle turmeric powder, red chili powder, dhania powder, jeera powder and kitchen king masala over the mixture. Mix well to coat with the spices.

  • 4. Add mixed vegetables to the pan and mix well with the tempering. Stir-fry the vegetables for a few minutes.

  • 5. Lower the heat, cover the pan, and let the vegetables cook until they are tender but still retain their crunchiness. Stir occasionally to ensure even cooking.

  • 6. Once the vegetables are cooked, add salt to taste and mix well.

  • 7. Garnish the Mixed Vegetable Sukki Bhaji with freshly chopped coriander leaves.

  • Serve the delicious Konkani Mixed Vegetable Sukki Bhaji as a side dish with rice or chapati or any other roti. 

  • Note: You can customize this dish by using any combination of vegetables you prefer or have on hand. The key to the recipe is the simple yet flavorful tempering.
