                          Konkani Methi Vada/ Methi vade

Konkani recipe,  Methi Vada, a delicious and crispy snack made with fenugreek leaves (methi) and shallow-fried to perfection. It is prepared in konkani homes. Methi leaves are very good for health. It purifies the blood. It is a source of Vitamins and many minerals. It is prepared with ground coconut and begdi chili along with soaked rice.

Servings: 2- 3 people

Ingredients:

  • 1 cup fresh fenugreek leaves (methi), finely chopped

  • 1 cup grated coconut

  • 1 teaspoon coriander seeds

  • ½ teaspoon split urad dal

  • ¼ teaspoon methi seeds 

  • 1 small onion, finely chopped

  • 1/2 teaspoon turmeric powder

  • 3-4 bedgi chili (adjust according to spice preference)

  • A pinch of asafoetida (hing)

  • A small marble shaped tamarind

  • Salt to taste

  • ½ cup rice soaked in water

  • Water, as needed

  • Oil for shallow frying

  • ½ cup rava for coating the vadas

Instructions:

  • 1. Heat 1 spoon of oil in a small kadai, on  a medium flame. Add coriander seeds, urad dal, methi seeds and bedgi chillies. Heat to golden brown. Allow it to cool.

  • 2.  Add grated coconut, Tamarind and the above spices in a mixer and grind to make a coarse masala. Add the soaked rice in the mixer and just churn it for 2 to 3 rounds. 

  • 3. In a mixing bowl, add the ground masala, chopped onion and the chopped methi leaves along with salt to taste. Mix well. The batter should be thick enough to coat the rava. 

  • 4. Make small balls. Then roll the balls in rava. Make the balls flat.

  • 5 . Heat the tawa for shallow frying. Spread oil over it. Place the methi vadas over the tawa. 

  • 6. Spread oil over the vadas. You can cover the vadas with a plate. Let it cook for some time. 

  • 7. Flip the vadas on the other side. Again put some oil over it. Close again with the lid. Cook for some more time till the vadas become golden brown. 

  • 8. Remove the shallow-fried Methi Vadas from the pan and place them on a plate 

  • 9. Repeat the process with the remaining fenugreek batter until all the Methi Vadas are shallow-fried.

  • 10. Serve the crispy and flavorful Konkani Methi Vadas hot as a snack or appetizer. They can be enjoyed as a side dish with rice and dal or any other gravy.
