                     POORAN POLI (PURAN POLI/HOLIGE)

Pooran poli (Puran poli) is a popular Maharashtrian sweet dish that is made with a filling (pooran) of sweetened lentils and a dough made from flour, ghee, and water. Here is a recipe to make Pooran Poli at home.

Total time: 1 hour 40 mins

Servings: 5 people

Ingredients for filling (Pooran):

·         Chana dal (split Bengal gram) or Toor dal-1 cup

·         Jaggery -1 cup

·         Cardamom powder-1 teaspoon

Ingredients for dough (Kanik):

·         Maida-3/4 cup + whole wheat flour-1/4 cup.

·         Oil- 5 tbsp.

·         Haldi powder-1/2 tsp.

·         A pinch of salt.

·         Water as required.

Instructions:

1.    Wash the chana dal (Toor dal) and soak it in water for 1-2 hours.

2.    Drain the water and pressure cook the dal with 2 cups of water until soft and mushy.

3.    Once the pressure has released, open the cooker and mash the dal using a masher or a blender. If using Toor dal, no need to mash in the blender. It cooks itself soft.

4.    Heat a heavy bottom pan or kadai on medium heat and add the mashed dal and jaggery to it. Cook the mixture stirring continuously, until the mixture thickens and forms a ball.

5.    Add cardamom powder to the mixture and mix well. Let it cool down.

6.    To make the dough (kanik), mix Maida, whole wheat flour, Haldi powder, oil, salt and water in a bowl to make a soft and smooth dough. Knead the dough for 5-10 minutes adding oil in between and then let it rest for 30 minutes.

7.    Divide the dough and the filling (pooran) into small equal portions.

8.    Take one portion of the dough and flatten it into a small circle. Place one portion of the filling (pooran) on top of the dough.

9.    Gently gather the edges of the dough and bring them together to enclose the filling. Press down the edges to seal the filling inside the dough.

10. Dust the dough ball with some flour and roll it out into a chapati, you can make a paratha thickness.

11. Heat a griddle (tava) on medium heat and place the rolled-out poli on it.

12. Cook until the bottom of the poli is lightly browned, then flip and cook the other side until browned.   

13.  Remove from heat and serve hot with ghee or milk.
