Vegetable kurma / Veg korma is a south indian recipe. It is made with coconut masala which is then served with paratha, poori, chapati or roti (Jawar, Makai, Bajra etc.,). It is made up of mixed vegetables. It is made in Konkani weddings with Poori also.

Ingredients:
1. Green
peas frozen or freshly peeled - 1 cup
2. Onion –
1 chopped
3. Potato
peeled and diced – 1
4. Cauliflower-
4 to 5 florets
5. Beans- 3
to 4 chopped
6. Carrot-
1 small chopped
7. Capsicum-
1 small chopped
8. Salt
to taste
9. Coriander
leaves- 2 tbsp
Masala:
1. Oil- 3
tsp
2. Grated
coconut (soyi)- 1 cup
3. Green
chillies- 4 to 5
4. Cumin
seeds( jeera)- 1 tsp
5. Cinnamon
( dalchini)- ½ inch
6. Cloves
(lavang)-3 to 4
7. Turmeric
powder( haldi pitto)- ½ tsp
8. Cashew
nuts (kaju bee)- 5 to 6
9. Poppy
seeds (khus khus)-1/2 tsp
10. Coriander seeds (kotambari)- 2 tsp
11. Onion-1 small chopped
12. Garlic- 5 to 6 cloves
13. Ginger – ½ inch chopped
14. Tomato- 2 small chopped
15. Water-2 cups
Instructions:
1. Firstly,
in a large kadai, cook all the vegetables until soft with the required quantity
of water.
2. In a
small kadai, heat oil and add jeera, coriander seeds, cloves, dalchini, poppy
seeds, green chillies, garlic, ginger, onion, cashew nuts one by one. Then add
grated coconut and turmeric powder. Fry lightly till a nice aroma comes.
3. Allow
it to cool the mixture. After cooling, grind the masala in a mixer grinder with the required quantity of water. Make
it a smooth paste. Before removing, add chopped tomatoes and grind again till
the smooth paste.
4. Add
the masala to the cooked vegetable mixture. Add salt to taste. Boil the kurma.
Finally, add chopped fresh coriander leaves.
5. Serve
hot with poori or chapati or any millet roti ( jowar roti, Makai roti, bajra
roti, rice roti etc.,)
